My body likes protein.  It hates sugar and flour.
I do not like protein.  I like sugar and flour.
It's a constant battle, knowing that when I eat more protein, less refined carbs, I feel better.  Sometimes feeling better isn't fun.

Would I prefer quiche with a perfect, flaky, buttery, delicious pie crust?
Hello. That is a dumb question.

I also would prefer to have a delicious, protein packed, day fueling, way bigger piece of crustless quiche, which helps me save up my carbs for a cupcake later in the day.

My friend, no-blog Alicia, has drastically turned her eating upside down in the most inspiring of ways, and served this quiche to me as we sat around her table drinking coffee and chatting about life and dreams and the future.
Surprisingly, I didn't miss the crust.  It is flavorful, rich, and seems way more indulgent than it really is.

Ingredients:
7 eggs
1 1/2 cups shredded cheddar cheese
1 1/2 cups frozen chopped broccoli (or your favorite veggies)
1/2 cup half & half
1/4 teaspoon salt
4 pieces of bacon cooked and crumbled
Pepper to taste
Whisk eggs, stir in the remaining ingredients, sprinkle the bacon on top.
Pour into a lightly greased (or sprayed with Pam) pie dish
Bake at 375º for 40 minutes.

Serves six.
Approx. 310 calories per hearty slice.

*Also great divided up into twelve cupcake lined muffin tins.
Easy and portable, and quick to heat up in the microwave the next day.
Two muffins per 310 calorie serving.

Yay protein.  And cupcakes. And not making Myfitnesspal mad.

  1. OH YUM. Thank you for posting this! I loooooove me some quiche but haaaate the flaky piecrust guilt.

My fave quiche combination is ham, swiss and green onions. This one sounds lovely too.

    in muffin tin variety.
TWO for the price of ONE?

MFP would love me for this.
    well, you, really. :)

i'd throw a slice or two of avocado on top (MFP seems to be getting along with my avocado obsession, so i'm gonna roll with it).

  3. From a non-crust-loving girl's perspective this looks amazing. And in my book, anything mini is just cute and fun, so muffin size is going to happen. Thanks for sharing!!

  4. Try finding recipes that use phyllo dough instead of pie crusts. We have been making apple hand pies instead of real apple pies lately and the phyllo dough makes you not miss the crust.

  5. I have been doing Atkins for a month now and crustless quiche is saving my gravy. Know what else is? Buffalo Chicken dip. Seriously, google it. I am addicted and it feels so good.

  10. THIS is why you need to blog. I gained weight from my gall bladder failure/removal experience and I have been looking for non-carb breakfast options that are filling. Made this for dinner last night (with non fat half and half, which seems wrong but worked) and it was so perfect.

    Thank you!
And since my gall bladder has been removed, I can actually eat bacon and cheese!
